Butternut Squash & Mushroom Ragout

This meal was based on the Butternut Squash-Shiitake Ragout with Bulgur with Parsley and Lemon Zest from Bon Appetit’s Food Lover’s Cleanse. I couldn’t find bulgur or shiitake mushrooms in my local Italian grocery store, so I substituted with grano (a wheat grain similar to wheat berries) and oyster mushrooms. We had to look up the definition of ragout, which we discovered is pronounced the same as ragù. Ragout is a French term & refers to a main-dish stew.
