Chocolate Cake with Orange Marmelade & Chocolate Ganache

While WWOOFing in Sicily, one of the other WWOOFers made a cake like this.  It was one of the best cakes I’ve ever eaten so I immediately set out to recreate it at home.  I baked this Chocolate Cake (which happens to be vegan), cut it in half to add orange marmelade in the middle, and then topped it with Chocolate Ganache.  While cooking the chocolate cake overflowed the pan.  Next time, I’ll use two pans and cook the halves separately.  This will eliminate the overflow and also eliminate the step of cutting the cooked cake in half.  I served the cake to two Italian dinner guests, one of whom responded “Troppo buono”.  This is true.  It is dangerously way too good.
