Vegetable Lasagna

I concocted this lasagna after reading through a number of vegetarian and vegan lasagna recipes.  I don’t think I’ll make this exact combo again,  but I spent so much time preparing it that I felt it deserved to be documented here.  I’ll likely leave the cauliflower out and up the spinach and mushroom mixture next go-around.  Here’s what’s inside:

Homemade lasagna noodles

Vegan Béchamel

Roasted cauliflower puree (mashed with a bit of soy milk)

Sautéed spinach and mushrooms

Grated parmesan (I just put the cheese on half to make the other half lactose-free)
