Breakfast Quinoa

Warm,satisfying breakfasts made with leftover cooked grains, such as this breakfast quiona, are quicly becoming a favoirte of mine.

Ingredients
1 cup prepared quinoa
1/2-3/4 cup milk (I use a mix of almond and rice milk)
1 tablespoon honey
1 teaspoon cinnamon
1/3 cup raisins
1/4 cup chopped toasted almonds (or another nut/seed of your choice)
1/2 sliced fruit (peaches, strawberries, apples, or blueberries)

Preparation
Place prepared or leftover quinoa in a sauce pan. Add milk, honey, cinnamon and raisins. Bring to a simmer and cook, stirring frequently, for 5 minutes or until the cereal thickens slightly. Top with nuts, an additional drizzle of honey, and fruit.  Makes one hearty serving or two small ones.  Have fun with the toppings!
