Breakfast Taco (for dinner!)
After reading Dr. Daphne Miller’s book Jungle Effect, I was inspired to try some of the book’s indigenous recipes. I decided to start with the Mexican recipes of the Tarahumara tribe. My plans were slightly foiled when I couldn’t find the masa harina needed to make handmade corn tortillas. I ordered some masa harina online and then sheepishly resorted to using some not-so-indigenous Uncle Ben’s flour tortillas from the corner grocery store. I filled the tortillas with scrambled eggs cooked with cilantro, chopped tomato, and red onion and topped them with this salsa and crumbled feta cheese.
