Italian Eggplant Ragoût from the Vegetarian Times: I came home from the Farmers’ Market with a few small eggplants and found this recipe that made use of items I already had on hand like onion, garlic, parsley, tomatoes, chickpeas, and capers.  I love when that happens!  I served the ragoût atop some couscous.
