Red Lentil Kofte

I had red lentils and bulgur lingering in the pantry so I queried Google for some recipe inspiration and discovered this Turkish appetizer — Mercimek Köftesi or Red Lentil Kofte.  I checked out this recipe and this recipe.  I used the latter, but shaped the kofte into small meatball-like balls.   The recipe notes you should wrap the kofte inside a lettuce leaf before eating — which sounds delicious — but I only had arugula on hand.  I served the kofte with an arugula salad topped with fresh tomatoes, olive oil, and lemon juice as well as a scoop of nonfat Greek yogurt.
