La Zuppa del Purgatorio
This was inspired by a soup we ate in Rome at Armando al Pantheon. The soup was made with zucca di mantova (pumpkin from Mantova) and a type of cannellini bean called fagioli del purgatorio. Our waiter told us the soup was called la zuppa della suocera (soup of the mother-in-law). We tried to recreate the soup at home using this recipe. The soup we made was very different than what we ate at the restaurant, but still pretty good. At the bottom of the bowl, we placed some chunks of toasted bread that we had rubbed with garlic and salt.
