Red Cabbage Salad
It’s December and the cabbage is bountiful at both the Farmers’ Markets & the garden where I volunteer. A couple weeks ago, I had more cabbage then I knew what to do with: red cabbage, green cabbage, and savoy cabbage. I whipped up a Red Cabbage Salad using this recipe as a base. I topped the salad with raisins, carrots, and pumpkin seeds and would have added pine nuts if I hadn’t lost them in the pantry. Now… what to do with the two heads of green cabbage in my fridge…?
